Saving Old Seagulls

HI i'm wondering about the cooling system on these seagulls now i see a copper pipe in the exhaust which connects to the block so water flows through this into the block...or is it out of the block...through this pipe? i thought it must flow up the drive shaft pipe but when i had a look it looks sea...

i notice they have 2 different size tubes for the carbs

are there only 2 different sizes of carbs

anyways could someone tell me which type carbs i need please
